Ramen in Tofu Shrimp Soup

Vitasoy San Sui Organic Hard Tofu

Ingredients

Vitasoy Sansui Organic Hard Tofu 1 pkg
Dried sakura shrimp 4 tbsp
Prawn (intestinal tract removed, retain shell and head for later use) 8 pc
Cooked ramen noodle 2 pkg
Chopped spring onion 1 tsp

Broth

Chicken soup 600 ml
Miso 2 tbsp
Bonito sauce 2 tbsp
Sugar 1 tsp

Instructions

  1. Saute the dried sakura shrimp over medium-low heat until fragrant. Set aside for later use.
  2. Blanch the prawns and set aside.
  3. Bring the chicken soup to a boil over medium heat. Add miso, bonito sauce, sugar, and the prawn shells and heads. Reduce heat to medium-low and simmer for 10 minutes.
  4. Discard the prawn shells and heads, then add tofu and bring the soup to a boil.
  5. Place the cooked ramen and blanched prawns into a bowl. Pour in the tofu and soup.
  6. Sprinkle the sautéed sakura shrimp and chopped spring onion on top before serving.
